Banana Oatmeal Pancakes

What better way to start your Sunday morning than with banana pancakes!?! Bananas are packed with essential vitamins, minerals, and nutrients. Potassium found in bananas is important for heart health and can regulate blood pressure levels.

Ingredients

  • 1 banana
  • 2/3 cup unsweetened almond milk
  • 2 Tbsp. honey
  • 2 tsp. cinnamon
  • 1 1/2 cups rolled oats
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 2 Tbsp. olive oil

Directions

  1. Place all ingredients into a blender. Blend for 1 minute or until smooth.

  2. Add olive oil to a griddle or large nonstick pan over medium heat.

  3. Add pancake batter to griddle 1/3 cup at a time. Cook for about 2-3 minutes or until golden brown and tiny bubbles appear around the edges.

  4. Flip and cook the other side for 2 more minutes.

  5. Serve the pancakes with fresh blueberries and drizzle of pure maple syrup.
