Roasted Pumpkin Seeds

Whether plain or seasoned with oils and spices, roasted pumpkin seeds are a deliciously healthy snack. With healthy fats, magnesium, and zinc, pumpkin seeds are full of nutrients that are linked to reduced risk factors for chronic diseases, including cancer.

Ingredients

  • 3/4 cup raw pumpkin seeds
  • 1 Tbsp. olive oil
  • 1/2 tsp. kosher salt

Directions

  1. Preheat your oven to 350°F

  2. Wash raw pumpkin seeds to remove fibers.

  3. Grease a medium baking sheet with 1 Tbsp. oil.

  4. Spread the pumpkin seeds evenly on a medium baking sheet.

  5. Sprinkle with kosher salt

  6. Bake until golden brown (about 15 minutes depending on the size of the seeds), stirring occasionally.
  7. Let cool and enjoy!
