Avocado Toast

What better way to start your morning than with a superfood! Avocado toast is one of my all-time favorite breakfasts. It’s so quick, easy, and healthy! Avocados contribute unsaturated “good” fats, and help the body absorb fat-soluble nutrients Vitamins A, D, K, and E. Spread on top of toasted gluten free bread and add an egg for an extra source of protein, then drizzle with avocado oil for oleic acid, healthy fat, and full of good cholesterol! Health tip: Top your toast with a dash of crushed red pepper flakes, which increase the body’s ability to dissolve fibrin, a substance integral to the formation of blood clots.

Ingredients

  • 2 slices gluten-free bread
  • 1 avocado
  • salt
  • pepper
  • crushed red pepper
  • 2 organic, pasture-raised eggs (optional)
  • olive oil

Directions

  1. Toast bread to preference.
  2. Slice avocado in half, remove pit, scoop out with a spoon; add each half to a slice of toast.
  3. Sprinkle with salt, pepper, and a pinch of crushed red pepper (or other preferred spices).
  4. Optional: add eggs sunny-side up (or personal preference); top avocado with cooked egg.
  5. Drizzle with olive oil.
